What I’m Eating: Stuffed Peppers

There are all sorts of comfort food. Mom’s pot roast. Thanksgiving dinner. Soup. Mac & cheese. A ginormous bowl of mashed potatoes for those really rough days. Don’t judge.

Those are the kinds of food that if you close your eyes and think of them you can smell and taste them. The MEMORY of the taste of home cooking is comforting.  But you know what else is comfortable? Not having to make dinner. And better yet-your husband making it for you.

Enter Stuffed Peppers. The “make yourself comfortable while someone else cooks for you” food- at least in this house.

This is what I consider an easy recipe. The extent of my participation in stuffed peppers is adding tomato paste to my grocery list and starting the rice.

Now, I do have to work a bit. Every once in awhile I walk into the kitchen and look around, sniffing the air like a dog when it knows you’re making something with meat in it. “Smells good! Let me know when it’s ready. I’ll be over here on the couch with my wine.”

So so comfortable.

Apparently this is what is happening while I browse Pinterest on the couch…

Time to go in and sniff around again. It’s starting to smell like heaven in the kitchen and I heard the oven beep so it must be done preheating.  While I’m here I’ll just pour myself some more wine and be on my way. Someone drank mine while I was pinning clothes to my “If you want to buy me something” Pinterest board. I’m also in a very heated Words With Friends battle. I really need to get back to that.”

Let me just get comfortable again. Ooh wait…I think  I see cheese…

Yes! Cheese! Cheese is so so comfortable! And if we’re adding cheese, I should put on sweat pants. I am going to need room. Ahhh! Comfort!

Ok I heard a commotion in the kitchen again. These may be ready. Let me go take a look…

Looks good huh? Comforting. Comfortable, and it was easy-at least for me. 

Oh and the ingredients? The seasoning? The cooking time? Well that’s a secret. Like most good memorable comfort food,  the recipe is not for distribution. Your grandma ain’t out running around telling everyone what makes her pie so tasty. 

For all we know, grandma’s secret recipe is grandpa makes the pie and grandma makes herself comfortable on the couch.

The same as the stuffed pepper recipe I’ll pass on to my kids.
