What I’m Eating Wednesday: Hamburger Soup

I want to state before you read and/or make this recipe that it does not taste like hamburgers. It’s more like chili without the “chili.” But I’ll tell you what- I made double the normal recipe and it is gone. All gone. Not a slurp left.

On the husband “man that was so good!” scale it gets a ten. Ten of those and five “oh I’m so full” belly rubs. Let’s just say if you make this your significant other will be very happy.

And you won’t have to make dinner for like 3 days.

So here you go- my Hamburger Soup recipe.

Hamburger Soup

Ingredients

  • 3 lbs ground turkey (85/15)— you’ll need the rendered fat for the vegetables
  • (2) 14.5 oz cans diced tomatoes— go with Italian style
  • 2 sweet peppers— red, yellow, or orange (mix it up)
  • 4 large carrots— diced
  • 4 celery stalks— diced
  • 1/2 a yellow onion— diced
  • (2) 6 oz cans tomato paste
  • 4 cups beef broth
  • 1 cup red wine
  • 3-6 garlic minced garlic— save time use the one in the jar and throw like 2-3 teaspoons in
  • Spices— Italian seasoning, oregano, sale, pepper, whatevs

Now what? 

You know I keep these steps simple cuz like, I have kids. I have a husband. I have a job. I have baths to give and wine to drink-and not all in that order.  You probably do to.

You’ll never see a recipe here that can’t be prep’d and readied in about 30 minutes.

Step 1: Brown the meat in a stock pot or soup pot. Remove it and drain it on a paper towel or a different pan. Leave the “meat juice.” 

I use turkey but you can use ground beef or chicken

Step 2: Use the meat juice and sauté the peppers, onion, carrots, and celery.  The carrots take longer so put them in 1st. This’ll take about 10 minutes. 

Ain’t it pretty?

This is a great time to pour yourself a glass of the wine from the bottle you have to open for this recipe.

Also can we decide now that I need to only post recipes that include wine?  

Step 3: Add the seasonings and the garlic until it’s fragrant. Then add the tomatoes, paste, broth and wine. Bring it to a low boil and then turn it down to a low simmer.

Step 4: Let it simmer for about 30 minutes, halfway through throw in some elbow macaroni. 

If you want make some garlic bread too! It goes great with wine..er… I mean…soup. Bread goes great with soup… and also wine.

And while you’re at it-throw some cheese on it. Cheese goes great with soup (and wine) too!

Serve it up. Await praise.

Now go ahead and finish that wine.  You’ve earned it!
