What I’m Eating: Sauage Gravy & Biscuit Casserole

I don’t know if this casserole counts as the last hoorah for the old year or the first hoorah for the new one since I make it New Year’s Day; but it is a cheesy, creamy, meaty, biscuity, eggy pan of “We can only eat that once a year!”

I think that makes it the first last hoorah. So Hooray! Hoorah! I’m eating sausage gravy & biscuit casserole for breakfast one time this year.

Ok maybe two. But that’s it.

My husband eats most of it both by choice and by force. But knowing that it is in the oven when it is in the oven is torture. And knowing it is in the fridge the next day is torture. It’s torture all around.

It’s HARD to not eat more!

It was even harder this year because normally I do an Amish breakfast casserole on Christmas and forgot to make it.

Yeah. I forgot. Sue me! I had other things on my mind and plate- and there was no room for the Amish casserole.

I did buy all the stuff and then forgot to make it the night before. And then Christmas Day my husband I were like “Why are we so hungry?” So we needed to relieve our hankering for a nice hot baked breakfast. And this is it!

As is the case with most things I eat-it is easy to make. As I am the queen of “almost home cooking” I’ll tell you, you can opt to make it completely from scratch if you so choose.

If you have time to make and bake your own biscuits and gravy from scratch God bless you. I however, do not. Feel free to take the long way around to get to this result or just go with what you see below.

I always find a way to get the whole recipe on my little card-even if I have to wrap it around the outsides!

I love a one pan recipe

Prepping takes about 10 minutes. Then just throw it in the oven uncovered for about 40 minutes (30-45 but probably 40).

This is just enough time to setup the Apple TV and Beachbody on Demand you got for Christmas and research workout programs- or maybe you’ll just do one now since you’re gonna have to earn this one. Or was that just me?

When you’re done with that T25 or 21-Day Fix routine, take the casserole out and let it rest for about 5 minutes.

It may not be the prettiest thing you eat, but it will be one of the best.

And since that’s what I was eating for the last two days, today I am eating a salad.
